Any Day Omelet For Two

Once again I created a new omelet that my hubby took a bite of and said, “Wow” I love the taste of the browned prosciutto.  Great idea.” I’ll keep making them as long as he (and I) keep enjoying them.  This would do for breakfast, Sunday brunch, or even those nights when it’s breakfast for dinner.

Ingredients:

Directions:

  1. Preheat a 10” non-stick frying pan to low/medium
  2. Lightly brown the prosciutto slices, turning once (about 2 -3 minutes per side)
  3. Remove from pan onto paper towel to drain
  4. Remove pan from heat and spray with non-stick spray
  5. Beat together the egg and egg whites, return pan to the heat and pour in the eggs
  6. Cover and allow to almost set (about 95 %) checking frequently
  7. Tear up the prosciutto into small pieces, slice up the provolone cheese into small pieces
  8. When eggs are almost set sprinkle the prosciutto pieces over half and follow with the provolone cheese pieces over th same half
  9. Fold the empty half of the omelet over the filled half, cover again and allow the cheese to melt and the eggs to finish setting (1-2 minutes)
  10. Slide onto a plate, cut in half and serve
