Asian Style Chicken Lettuce Cups
Yes, yet another way to use boneless, skinless chicken breast. You can substitute with ground chicken, but you can buy the breast pre-cooked at Trader Joe’s, Costco, or most any supermarket which makes this recipe super quick and easy to throw together.
Ingredients:
- 16 oz (1 lb) cooked, finely chopped chicken breast
- ½ cup canned sliced water chestnuts drained and finely chopped
- ½ cup canned mandarin oranges packed in juice drained and cut into ½ slices
- ¼ cup finely chopped red bell pepper
- ½ teaspoon hot chili oil or a sprinkle of red chili flakes
- 16 Tablespoons Trader Joe’s Sesame Soy Vinaigrette
- 12 butter lettuce leaves (think cup)
Directions:
- Place chicken, water chestnuts, mandarin oranges, red bell pepper, chili oil (or flakes) in a medium large bowl and combine all ingredients
- Add Vinaigrette and toss
- Divide mixture on lettuce leaves and serve.
