Asian Style Turkey Cabbage Cups
Here’s another way to use ground turkey that is a favorite of mine.
Ingredients:
- 20 ounces lean ground turkey
- 1 teaspoon grated peeled fresh ginger
- ½ cup thinly sliced green onions
- 1 tablespoon brown sugar
- 2 tablespoons chopped fresh cilantro
- 2 tablespoons chopped fresh mint
- 2 tablespoons fresh lime juice
- 1 ½ tablespoons fish sauce
- 2 teaspoons olive oil
- 1 teaspoon dark sesame oil
- 1 jalapeño pepper finely chopped
- 12 large Napa cabbage leaves
- ¼ cup chopped unsalted dry roasted peanuts
Directions:
- Add ginger and turkey to a preheated nonstick skillet, cook until turkey is just done being sure to stir frequently
- Drain turkey mixture and place in a large bowl
- Add green onions and the rest of the ingredients with the exception of the cabbage leaves and the peanuts
- Toss well
- Spoon 1/3 cup of turkey mixture into each cabbage leaf and top with peanuts
