Avocado Chicken Salad

Chicken salad is versatile since it can be a lunch or a dinner and holds well in the refrigerator.  Kids and adults alike enjoy it so it doesn’t have to be a just for me ‘cause I had weight loss surgery food.  This one has chicken and avocado, two of my favorite foods.


Ingredients:

Directions:

  1. Poach chicken in either water or some chicken broth until done. 
  2. Cool, and then shred.
  3. Mix with all other ingredients.
  4. Chill in refrigerator for about an hour to allow all of the flavors to blend
  5. Enjoy!  Eat alone, on a bed of romaine, iceberg or spinach, or stuff a tomato with it.
