Avocado Chicken Salad
Chicken salad is versatile since it can be a lunch or a dinner and holds well in the refrigerator. Kids and adults alike enjoy it so it doesn’t have to be a just for me ‘cause I had weight loss surgery food. This one has chicken and avocado, two of my favorite foods.
Ingredients:
- 3 boneless, skinless chicken breasts
- 1 small CA avocado mashed
- ¼ cup Fage 0% Greek yogurt (or brand of your choice)
- ¼ onion, chopped (if you like onion)
- ½ cup chopped celery
- Juice of ½ lime
- 2 Tablespoons cilantro
- Sea Salt and fresh ground pepper to taste
Directions:
- Poach chicken in either water or some chicken broth until done.
- Cool, and then shred.
- Mix with all other ingredients.
- Chill in refrigerator for about an hour to allow all of the flavors to blend
- Enjoy! Eat alone, on a bed of romaine, iceberg or spinach, or stuff a tomato with it.
