Bacon, Egg, Green Chiles, and Cheese Frittata

This one serves four or makes four servings of yummy, microwave reheat frittata for one.  All of my favorite breakfast flavors rolled into one slice of heaven.

 

Ingredients:

Directions:

  1. Spray the bottom and sides of an 8x8 pan with non-stick spray (I use coconut oil spray because nothing sticks to it)
  2. Preheat oven to 350 degrees
  3. Pour eggs into pan
  4. Add about ½ of the cheese, mixing with a fork to spread
  5. Add chiles to the eggs and cheese, mixing with a fork to spread evenly
  6. Add the bacon bits and spread evenly with a fork
  7. Top with the remaining cheese
  8. Bake at 350 degrees for about 30 minutes until eggs are just set, cheese is melted and top is beginning to brown
  9. Remove from oven, allow to cool for about 5 minutes, slice and serve piping hot

PRO-TIP:  I wrap the individual cooled servings in plastic wrap and store in the refrigerator for several days.  I reheat on a microwave safe plate, removing the plastic wrap, but covering the eggs and heating on half power for about 1 minute 30 seconds until heated through.  DO NOT overcook when reheating in the microwave.  Everyone’s microwave is different however using half power has been my key to being able to eat leftovers.
