Bacon, Tomato, Avocado, and Cheese Omelet

I love BLTA - bacon, lettuce, tomato and avocado sandwiches, but alas, I no longer eat bread.  I can put this all together and wrap it in lettuce, and this morning I decided to omit the lettuce and add the eggs.  It was a good choice.

 

Ingredients:

Directions:

  1. Spray a skillet with non stick spray and heat to medium on stove
  2. Whisk eggs and egg whites and pour into pre heated pan
  3. Allow to cook until almost set
  4. Add bacon slices, tomato, avocado and cheese on half of the eggs
  5. Flip the other half of eggs over and continue cooking until cheese is melted and eggs are set
  6. Remove from heat and slide onto a plate
  7. Divide in 2 and serve hot
