Bacon, Tomato, Avocado, and Cheese Omelet
I love BLTA - bacon, lettuce, tomato and avocado sandwiches, but alas, I no longer eat bread. I can put this all together and wrap it in lettuce, and this morning I decided to omit the lettuce and add the eggs. It was a good choice.
Ingredients:
- 2 Jumbo Eggs
- 3 ounces Egg Whites
- 4 Slices Center Cut Bacon, Cooked and Set Aside to Drain on Paper Towels
- 2 ounces Trader Joe's Shredded Lite Mozzarella Cheese
- 1 Small Tomato, Sliced
- 1/4 Small Avocado, Sliced
Directions:
- Spray a skillet with non stick spray and heat to medium on stove
- Whisk eggs and egg whites and pour into pre heated pan
- Allow to cook until almost set
- Add bacon slices, tomato, avocado and cheese on half of the eggs
- Flip the other half of eggs over and continue cooking until cheese is melted and eggs are set
- Remove from heat and slide onto a plate
- Divide in 2 and serve hot
