Baja Breakfast Scramble

I had leftover Mexican shrimp cocktail from my dinner out and created this taste treat that could work in an omelet just as well as a quick scramble.  You can use frozen cooked shrimp which I always keep on hand anyway for quick meals or snacks that are low in calories and high in protein.

Ingredients:

Directions:

  1. Spray a skillet with non stick spray and heat to medium
  2. Add eggs, and when they begin to cook start stirring and add the shrimp, Pico De Gallo, olives and continue scrambling in the pan
  3. When almost done add the cheese and scramble until melted
  4. Plate and serve

Nutrition:  Makes two servings, each with approximately

 Pro-Tip:  Make it an omelet, top it with a 1/2 tablespoon Fage 0% plain yogurt and some more olives, serve with a veggie on the side and call it dinner.  Be sure to add the calories/protein to your stats.
