Barbecue Stir Fry

I saw a recipe in one of Hungry Girl’s emails that looked interesting, so I did my usual - repurposed it for those of us with surgically altered stomachs.  The result is an easy lunch or dinner for one with several ways to substitute, and meet YOUR personal tastes.  Let’s start with the basics and vary it from there.  This will make a meal for one, or double it for two, or triple… well, you get the picture, right?


Ingredients:

Directions:

  1. Spray a 10 inch skillet with non-stick spray (my current fave is coconut oil spray) and bring to medium high
  2. Add broccoli slaw and ¼ cup water
  3. Cover and cook for 4-6 minutes until fully softened.
  4. Remove cover and cook and stir if necessary until all the water has evaporated
  5. Remove from pan and cover to keep warm
  6. Spray skillet with non-stick once again, return to the heat and add ground beef, and garlic and onion to taste (1/8 - ¼ teaspoon of each)
  7. Cook and crumble about 2 1/3 - 3 minutes making sure beef is completely cooked through
  8. Return the broccoli slaw to the skillet, add the barbecue sauce and cook and stir until heated and mixed all the way through.  Serve hot and enjoy!
