Bruschetta Egg Salad
Hard boiled eggs and cottage cheese raised to a new level savory.
Ingredients:
- 1 Hardboiled Egg
- 1 Hardboiled Egg White
- 1/2 cup Low Fat Cottage Cheese
- 2 tablespoons Trader Joe’s Bruschetta
- Fresh Ground Pepper to Taste
Directions:
- Mash together the hardboiled egg and the hardboiled egg white
- Add the cottage cheese and the Bruschetta. Mix well, give a twist fresh ground pepper and it’s breakfast, lunch or a great dip for mini sweet peppers.
