Canadian Bacon and Egg Frittata South of The Border Style
Sunday morning meal planning has me making quick, toss in the microwave to heat breakfasts for hubby and I. My frittatas yield 8 servings so that covers us for a few days. This is what I tossed together this week and it is tasty.
Ingredients:
- 3 Eggs
- 15 Egg Whites
- 5 Rounds of Uncured Canadian Bacon, Diced
- 2 cups Baby Spinach, Chopped
- 8 ounces Lite Shredded Mozzarella Cheese
- 3 Sweet Mini Peppers, Chopped
- 1/2 Small Can of Mild Green Chilies, Chopped
- 4 tablespoons Fresh Corn Kernels, Off The Cob (I Had Leftovers From Dinner)
- 8 tablespoons Mango Peach Salsa
- 1 teaspoon Taco Seasoning
Directions:
- Preheat oven to 350 degrees
- Spray a 12x8x2 pan with non stick spray
- Cover bottom of pan evenly with spinach, peppers, bacon
- In a medium bowl whisk together the eggs, egg whites, chilies, corn, salsa and taco seasoning
- Pour over spinach, peppers and bacon
- Top with shredded mozzarella cheese
- Bake at 350 degrees until center just springs back as done, about 35 minutes. Do not overcook
- Serve hot, or cool completely, slice and refrigerate. To reheat, use microwave on 50% power, cover slice loosely and heat for about 1 minute 20 seconds until just heated through
