Caprese Zoodles With Ground Turkey

I love summertime when tomatoes are fresh and I can get fresh basil from my front yard.  Add fresh mozzarella, some ground spiced turkey and put it over some zucchini that has been turned into Zoodles and it's a plate of deliciousness.  You can easily substitute cooked shrimp or ground chicken or beef for the turkey.

Ingredients:

Directions:

  1. Spray a pan with non stick spray and heat to medium
  2. Add turkey and break it up as it cooks
  3. Add garlic, oregano and crushed red pepper and cook turkey until fully browned
  4. Remove from pan and set aside
  5. Re spray pan and add Zoodles, sea salt and fresh ground pepper, tossing and cooking just until warmed through and al dente
  6. Toss in the olive oil and the turkey
  7. Remove to a large bowl and add fresh mozzarella and tomatoes, tossing to combine
  8. Serve, drizzling 1/4 tablespoon balsamic vinegar and a sprinkle of basil over each bowl
