Caprese Zoodles With Ground Turkey
I love summertime when tomatoes are fresh and I can get fresh basil from my front yard. Add fresh mozzarella, some ground spiced turkey and put it over some zucchini that has been turned into Zoodles and it's a plate of deliciousness. You can easily substitute cooked shrimp or ground chicken or beef for the turkey.
Ingredients:
- 6 ounces Extra Lean Ground Turkey
- 20 ounces of Zucchini Turned Into Zoodles With Your Vegetti
- 1 cup Cherry Tomatoes Halved
- 4 ounces Fresh Mozzarella (If It is In Balls Cut Them In Half)
- 3 Cloves of Garlic, Minced
- 1 tablespoon Olive Oil
- 1 tablespoon Balsamic Vinegar
- 1 teaspoon Oregano, or to Taste
- 1/2 teaspoon Sea Salt
- 1/2 teaspoon Pepper, Fresh Ground
- 1/4 teaspoon Crushed Red Pepper, or to Taste
- Fresh Basil Cut Into Strips For Garnish
Directions:
- Spray a pan with non stick spray and heat to medium
- Add turkey and break it up as it cooks
- Add garlic, oregano and crushed red pepper and cook turkey until fully browned
- Remove from pan and set aside
- Re spray pan and add Zoodles, sea salt and fresh ground pepper, tossing and cooking just until warmed through and al dente
- Toss in the olive oil and the turkey
- Remove to a large bowl and add fresh mozzarella and tomatoes, tossing to combine
- Serve, drizzling 1/4 tablespoon balsamic vinegar and a sprinkle of basil over each bowl
