Cauliflower

Cauliflower “Breadsticks”

I make a mean cauliflower mashed potato so I thought this recipe would be another great way to serve cauliflower and get in a little crunch too.


Ingredients:

Directions:

  1. Preheat oven to 450 degrees
  2. Chop up the cauliflower into chunks and microwave on high for about 5 minutes until soft
  3. Place cauliflower in food processor and blend to mashed potato consistency
  4. In a bowl, stir together cauliflower, eggs, cheese and seasonings.
  5. Lightly spray a baking sheet with olive oil spray (I would use my Misto) or be even lazier and place a piece of parchment paper on the baking sheet
  6. Coat with the mixture to about ½ inch thick
  7. Bake at 450 degrees for about 20 - 25 minutes until top begins to brown
  8. Remove from oven, add additional cheese if desired, cut or tear into portions and enjoy!
  9. Options - you can add the herbs/spices of your choice like some parsley basil or oregano to give it a flair, or perhaps just some sea salt on top before baking.
