Cheesy Cauliflower Biscuits
Cauliflower has become the new replacement for flour in so many places. Why not add eggs, cheese and make some awesome biscuits that are Weight Loss Surgery friendly both in calories and protein. What a great snack or side dish.
Ingredients:
- 1 head cauliflower, leaves removed
- 3 cloves garlic, minced
- ½ cup 0% Fage Greek yogurt (plain)
- ½ cup shredded cheddar cheese
- 2 eggs
- 2 egg whites
- 1 teaspoon coarse (kosher) salt
- ½ teaspoon black pepper
Directions:
- Preheat oven to 400 degrees
- Make mashed cauliflower by steaming cauliflower for about 10-12 minutes until very tender. Drain and then transfer to food processor (or blender). Add minced garlic and pulse several times until smooth and creamy
- Transfer mashed cauliflower into a large mixing bowl.
- Add in two whole eggs, cheddar cheese, non-fat Greek yogurt, salt and pepper and mix together
- In a separate bowl beat the egg whites until stiff
- Slowly fold the egg white mixture into the cauliflower mixture.
- Coat a mini muffin pan with cooking spray. (I use coconut oil spray because NOTHING sticks to it)
- Fill the muffin cups to the top with the cauliflower mixture
- Bake for 20 - 25 minutes until golden brown
- Remove from pan, set on a cooling rack
- Serve warm
