Cheesy Garlic Chicken
I don’t know about you, but I am always looking for new ways to prepare chicken. I would probably serve this one over a bed of “wilted” spinach or with a small side salad to complete the meal.
Ingredients:
- 4 Boneless, Skinless Chicken Breasts
- 4 ounces Shredded Part Skim Mozzarella Cheese
- 4 tablespoons Brown Sugar
- 4 Cloves of Garlic Minced
- 3 teaspoons Olive Oil
- 1 teaspoon Salt
Directions:
- Preheat oven to 375 degrees
- Spray a 13 x 9 x 2 casserole dish to lightly grease (I use olive oil spray in my Misto or Trader Joe’s coconut oil spray for even easier clean up)
- Sauté garlic in olive oil until tender and fragrant
- Remove from heat and stir in brown sugar and salt
- Place chicken breasts in baking dish and cover with about 3/4 of the garlic/oil/sugar mixture
- Bake for 30 minutes
- Sprinkle cheese over chicken and top with remaining garlic/oil/sugar mixture
- Bake for an additional 10 minutes until cheese is fully melted

Pro-Tip: I might lighten up this recipe by reducing the amount of olive oil and using a Splenda/brown sugar mixture (it is sold that way).
