Cherry Vanilla Cheese Bowl
This is like eating a bowl of cherry vanilla ice- cream for breakfast or lunch. Quick, easy, protein packed and satisfying.
Ingredients:
- 1/2 cup Low Fat Cottage Cheese
- 1/4 cup Fat Free Ricotta Cheese
- 1/3 cup Frozen, Pitted Dark Cherries
- 2 tablespoons Splenda
- 1 teaspoon Lemon or Lime Juice
- 1 teaspoon Vanilla Extract
Directions:
- In a small bowl mix together cottage cheese, ricotta cheese and vanilla extract. Set aside.
- In a microwave safe measuring cup or bowl mix together cherries, Splenda and lemon juice. Microwave on 50% power for about 1 minute. Remove and break up cherries with a fork. Microwave on 50% power for another 15 seconds. Stir together and pour over the cheese. Enjoy!
