Chicken Burgers Mediterranean for Breakfast or Lunch

Extra good and tasty.

Ingredients:

Directions:

  1. Spray a pan with olive oil spray and heat to medium on the stove
  2. Add the chopped onion and sauté for 3-4 minutes, until soft
  3. Add the garlic, mix and cook for another 2 minutes
  4. Add the spinach, mix and cook for 3 minutes
  5. Mix in the salt, pepper and nutmeg
  6. Remove to a mixing bowl and allow to cool (I put it in the refrigerator for about 10 minutes)
  7. Add the ground chicken, Panko bread crumbs, egg substitute and the remaining seasonings.  Mix well
  8. Form into 8 patties and chill for at least 10 minutes in the refrigerator (this helps the patties stay together on the grill)
  9. Grill on medium heat or in the pan on your stove, or broil for about 3-4 minutes per side turning once.  Internal temperature should be around 165 degrees
  10. For lunch top with a piece of your favorite cheese (be sure to add the calories/protein) and a slice of tomato
  11. Wrap cooled leftovers and store in refrigerator or freezer.
  12. Use for quick breakfasts (microwave on 50% power for about 1 minute), then top with a sunny side up egg
  13. For quick lunches microwave on 50% power for about 1 minute, then add cheese ( feta crumbles would be great on this) and microwave for 10 seconds more, or heat in a skillet over medium heat until warmed throughout
  14. Serve hot
