Chicken Burgers Mediterranean for Breakfast or Lunch
Extra good and tasty.
Ingredients:
- 1 pound ground chicken, extra lean
- 1/2 onion, chopped
- 1/4 cup Panko bread crumbs
- 1/4 cup egg substitute
- 10 ounces fresh spinach, chopped
- 2 cloves garlic, chopped
- 1 teaspoon nutmeg, ground
- 1/2 teaspoon sea salt
- 1/2 teaspoon fresh ground pepper
- 1/2 teaspoon fresh ground lemon pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon oregano
- 1 tablespoon parsley, dried
Directions:
- Spray a pan with olive oil spray and heat to medium on the stove
- Add the chopped onion and sauté for 3-4 minutes, until soft
- Add the garlic, mix and cook for another 2 minutes
- Add the spinach, mix and cook for 3 minutes
- Mix in the salt, pepper and nutmeg
- Remove to a mixing bowl and allow to cool (I put it in the refrigerator for about 10 minutes)
- Add the ground chicken, Panko bread crumbs, egg substitute and the remaining seasonings. Mix well
- Form into 8 patties and chill for at least 10 minutes in the refrigerator (this helps the patties stay together on the grill)
- Grill on medium heat or in the pan on your stove, or broil for about 3-4 minutes per side turning once. Internal temperature should be around 165 degrees
- For lunch top with a piece of your favorite cheese (be sure to add the calories/protein) and a slice of tomato
- Wrap cooled leftovers and store in refrigerator or freezer.
- Use for quick breakfasts (microwave on 50% power for about 1 minute), then top with a sunny side up egg
- For quick lunches microwave on 50% power for about 1 minute, then add cheese ( feta crumbles would be great on this) and microwave for 10 seconds more, or heat in a skillet over medium heat until warmed throughout
- Serve hot
