Chicken "Enchilada" Bowl
This is the easiest meal to prepare. Four ingredients and it's a taste sensation. The best part is it's a set it and forget it in the slow cooker. Toss two ingredients in the slow cooker, come home and spend 5 more minutes and it's dinner.
Ingredients:
- 1 pound Chicken Breasts
- 2 cups Green Enchilada Sauce
- 4 ounces Lite Shredded Cheddar Cheese
- 2 2/3 cups of Cauliflower “Rice
Directions:
- Place chicken breasts and enchilada sauce in slow cooker. Cook on high for 4-5 hours or low for 6-8 hours
- Remove chicken from crock pot and shred with 2 forks. Place back into crock pot and mix thoroughly
- Cook cauliflower rice in microwave on high, covered loosely for 5 minutes
- Place 2/3 cup of cauliflower rice in each of 4 bowls, distribute the chicken and enchilada sauce evenly among the 4 bowls and top each with 1 ounce of cheese. Serve hot
- Pro tip : Heat bowls that are oven proof at 175 degrees in your oven so that food stays hot to the very last bite
