Chicken "Enchilada" Bowl

This is the easiest meal to prepare.  Four ingredients and it's a taste sensation.  The best part is it's a set it and forget it in the slow cooker.  Toss two ingredients in the slow cooker, come home and spend 5 more minutes and it's dinner.

Ingredients:

Directions:

  1. Place chicken breasts and enchilada sauce in slow cooker.  Cook on high for 4-5 hours or low for 6-8 hours
  2. Remove chicken from crock pot and shred with 2 forks.  Place back into crock pot and mix thoroughly
  3. Cook cauliflower rice in microwave on high, covered loosely for 5 minutes
  4. Place 2/3 cup of cauliflower rice in each of 4 bowls, distribute the chicken and enchilada sauce evenly among the 4 bowls and top each with 1 ounce of cheese.  Serve hot
  5. Pro tip :  Heat bowls that are oven proof at 175 degrees in your oven so that food stays hot to the very last bite
