Chicken Fajita Scramble

So what do you do on a morning when you have leftover rotisserie chicken, mini sweet peppers, onions and shredded “Mexican style” cheese?  You add taco seasoning, scramble it all together with some eggs and egg whites and top it with some sliced avocado, that's what.  You can serve this with warmed tortillas for the family.

Ingredients:

  1. Spray a pan with non stick spray and heat to medium
  2. Add onions and peppers and sauté until onions and peppers begin to soften
  3. Add garlic and continue cooking for another minute or two, combining all
  4. Add taco seasoning and chicken and cook until chicken is warm and the seasoning becomes fragrant
  5. Whisk together the eggs and the egg whites and add to the pan, stirring to combine all and scramble evenly
  6. When eggs are almost set, add cheese and continue scrambling until eggs are done and cheese is blended throughout
  7. Remove from heat, serve hot and top each plate with 1/2 ounce of sliced avocado

Nutrition:  Makes 3 servings, each with approximately
