Chicken Salad with Chili Powder
While my crustless quiche was baking this past Sunday morning I decided to make some lunch to last for several days too. Opened my cupboard and came up with the following recipe for a different flavor to my chicken salad. I can serve it over lettuce or baby spinach, or eat it as is, or stuff a tomato with it.
Ingredients:
- Two 12.5 oz. cans chicken (I buy a 6 pack of these from Costco)
- ¾ cup chopped celery
- 1 sweet red pepper chopped
- 2 tablespoons LITE mayonnaise
- 4 tablespoons Bolthouse lite ranch dressing
- About 1 tablespoon chili powder (or to taste)
Directions:
- Pour both cans of chicken into a colander and drain
- Rinse lightly with cold water to get some of the sodium out
- Place chicken in a medium bowl and separate with a fork
- Add all other ingredients and stir well
Nutrition: Makes 4 very generous servings at around
