Chicken Sausage Zucchini Lasagna

I was able to prep this in the morning, pop the pan in the frig and later in the day pop the pan into the oven for baking into a bubbly, cheesy, delicious dinner.

 

Ingredients:

Directions:

  1. Preheat oven to 350 degrees
  2. Spray the bottom of a 13 x 9 x 2 pan with non stick spray
  3. Layer the squash, some sauce, the chicken sausage, squash, some sauce, the mozzarella cheese, squash, some sauce, the ricotta cheese (you can do this in spoonfuls and then press down lightly, the heat will spread it as it cooks), squash, the rest of the sauce and sprinkle with the Parmigiano Reggiano cheese.  Also sprinkle on any crushed red pepper if you like it spicy
  4. Bake at 350 degrees for 45-60 minutes until cheese is bubbly and starting to brown
  5. Cool for 5 minutes and serve hot
