Chicken Taco Bowl
I don’t know about you, but I love being able to toss everything into one skillet and call it dinner, with leftovers to boot!
Ingredients:
- 1 pound Ground Chicken
- 1 Can Tomatoes with Chiles (Rotel or Other Brand)
- 1 Can Black Beans Drained and Rinsed
- 2/3 cup Frozen Roasted Corn
- 2 Zucchini Chopped
- 1 Red Bell Pepper Chopped
- 1 Onion Chopped
- 3 Cloves Garlic Minced
- 1 teaspoon Taco Seasoning Mix
- 1 teaspoon Ground Cumin
Directions:
- Spray a large skillet with non-stick spray and heat to medium high
- Add chicken and cook until all the pink is gone, breaking it up as you go
- Remove to a plate and respray skillet
- Add onion, garlic, red pepper, zucchini and cook, stirring frequently until veggies are semi soft
- Add chicken back in along with tomatoes, black beans, corn, taco seasoning and cumin
- Stir all together and simmer for at least 1/2 hour, uncovered to blend all the flavors
- Serve hot in bowls. This can be served over cauliflower rice and topped with a bit of cheese. Be sure to add in the calories if you do
