Chicken Taco Bowl

I don’t know about you, but I love being able to toss everything into one skillet and call it dinner, with leftovers to boot!

Ingredients:

Directions:

  1. Spray a large skillet with non-stick spray and heat to medium high
  2. Add chicken and cook until all the pink is gone, breaking it up as you go
  3. Remove to a plate and respray skillet
  4. Add onion, garlic, red pepper, zucchini and cook, stirring frequently until veggies are semi soft
  5. Add chicken back in along with tomatoes, black beans, corn, taco seasoning and cumin
  6. Stir all together and simmer for at least 1/2 hour, uncovered to blend all the flavors
  7. Serve hot in bowls.  This can be served over cauliflower rice and topped with a bit of cheese.  Be sure to add in the calories if you do
