Chicken Waldorf Salad
I used rotisserie chicken for this recipe, but you can use canned chicken, leftover grilled or roasted chicken and wind up with the same delicious result.
Ingredients:
- 15 ounces Rotisserie Chicken Chopped Into Bite Size Pieces
- 1 Small Apple, Chopped
- 3 Stalks Celery, Chopped
- 1/4 cup of Walnuts, Chopped
- 15 Red Seedless Grapes, Sliced In Half
- 1 cup Fage 0% Greek Yogurt, Plain
- 1/2 tablespoon Lemon Pepper
- 1 tablespoon Honey
Directions:
- In a large mixing bowl add chicken, apple, celery, walnuts, grapes and lemon pepper. Stir to mix well
- Add yogurt and honey and mix well, making sure to “wet” all the ingredients.
- Place in individual containers and refrigerate to blend flavors.
- Serve out of the container with a fork, over greens, wrapped in a crisp lettuce leaf, on a rice cake, or any way you choose.
