Chicken With Mushrooms and Green Onions

Here’s a quick and easy dish to get to the table in less than ½ an hour start to finish that will please many.  I might make some cauliflower “fried rice” to serve it on or alongside.


Ingredients:

Directions:

  1. In a very large skillet (it will have to hold 4 cups of water plus everything else) or wok heat the sesame oil over medium heat
  2. Add the green onion whites and garlic and cook, stirring constantly for 1 minute
  3. Add the mushrooms and cook until softened, around 3 minutes more
  4. Pour the water into the pan and stir in the ginger and soy sauce simmering for about 2 minutes
  5. Gently place the chicken into the broth, reduce heat to low, cover and poach until the chicken is just cooked through - about 6-7 minutes
  6. Transfer the chicken pieces to wide shallow bowls  Ladle broth over the chicken
  7. Garnish with the green onion greens and serve
