Chicken With Mushrooms and Green Onions
Here’s a quick and easy dish to get to the table in less than ½ an hour start to finish that will please many. I might make some cauliflower “fried rice” to serve it on or alongside.
Ingredients:
- 1 tablespoon toasted sesame oil
- 1 small bunch green onions sliced, whites and green parts separated
- 1 garlic clove finely chopped
- 4 ounces shitake mushrooms (caps only) thinly sliced
- 4 cups water
- ½ cup low sodium soy sauce
- A two inch piece of ginger root peeled and sliced into ¼ inch rounds
- 1 pound boneless, skinless chicken breasts cut into ¾ inch cubes
Directions:
- In a very large skillet (it will have to hold 4 cups of water plus everything else) or wok heat the sesame oil over medium heat
- Add the green onion whites and garlic and cook, stirring constantly for 1 minute
- Add the mushrooms and cook until softened, around 3 minutes more
- Pour the water into the pan and stir in the ginger and soy sauce simmering for about 2 minutes
- Gently place the chicken into the broth, reduce heat to low, cover and poach until the chicken is just cooked through - about 6-7 minutes
- Transfer the chicken pieces to wide shallow bowls Ladle broth over the chicken
- Garnish with the green onion greens and serve
