Chilled Cucumber Soup

Summer is here.  Hot sunny days call for cool lunches and dinners.  What better than some chilled cucumber soup with my favorite Greek yogurt as it’s base.


Ingredients:

 Directions:

  1. Puree yogurt and cucumber.
  2. Add green onion, garlic and dill and pulse to blend.
  3. Garnish bowl with chopped tomato and splash of olive oil
  4. Enjoy a cool refreshing lunch or dinner.

Serves 4

Approximate - per serving:

If end result is too thick you can thin with a bit of vegetable broth, chicken broth, coconut or almond milk, or you can use it thick as a dip with cucumber spears, celery sticks, green and red pepper slices, etc.
