Chipotle Shrimp
Shrimp on the Barbie is one of my favorites. Nice, spicy shrimp on the Barbie and I am in heaven. Bet this would work with scallops too. Serve with a side of quinoa salad perhaps?
Ingredients:
- 3 Cloves minced garlic (I use the frozen cubes from Trader Joe’s)
- 2 Chipotle peppers in adobo sauce chopped
- Juice of 1 lemon (or lime - I prefer lime)
- 1 Tablespoon olive oil
- 1 Tablespoon paprika
- 1 teaspoon fresh cilantro chopped
- 1 teaspoon sea salt
- ½ teaspoon fresh ground pepper
- ½ teaspoon red pepper flakes
- ¼ teaspoon cayenne pepper
- 2 pounds of uncooked medium shrimp peeled and deveined
- Skewers - wooden or metal
Directions:
- Mix together the first 10 ingredients in a bowl.
- Stir in the shrimp and mix well to coat
- Marinate for 30 minutes in the refrigerator
- Preheat grill for medium-high heat and spray lightly with grill non stick spray
- Remove the shrimp from the marinade and discard the marinade
- Thread about 5 shrimp per skewer and grill until shrimp turn pink and opaque in the center - about 2 minutes per side

- 150 calories and
- 25 grams protein.
Variations:
- You can alternate shrimp with peppers, summer squash or pineapple chunks on the skewers. Be sure to add the calories to the totals.
