Clare’s Berry High Protein Mousse

When I added avocado to my breakfast shake, something amazing happened. It turned into the most fabulous, creamy, frothy treat ever! Now it rivals ANY dessert out there!
Berry Mousse
Ingredients:
- ¾ cup non fat milk
- 1 scoop vanilla or strawberry protein powder
- ½ cup chopped frozen strawberries, raspberries, or blackberries or combination
- ¼ cup frozen wild blueberries
- ½ avocado, chopped ♦ this is the secret ingredient - DO NOT leave it out! ♦
- ¼ cup chopped kale (Optional)
- 1 tsp vanilla extract (Optional)
- Splenda (Optional )
- Dollop of Greek yogurt, whole berries, and mint leaves for garnish (Optional)
Directions:
- Put all ingredients into blender and process on medium until well blended
- Then blend on high to incorporate a lot of air and make it really thick and frothy
- Spoon the wonderful mousse into your favorite crystal wine glass or fanciest cut glass bowl and sit somewhere comfy with a beautiful view and luxuriate in every spoonful!
- To serve to guests top with a dollop of Greek yogurt garnish with berries and mint leaves
Makes one full-meal serving as a breakfast, or 4 dessert servings with added berries.

I usually use fresh fruit but for this recipe the frozen fruit is essential to achieve the desired texture.
Remember, if you add more berries or substitute a different protein powder (Fit Frappe is 130 calories and 20 grams protein) you will need to adjust the nutritional values.
