Crab Salad
Now that summer is here I like to have some quick, no cook ideas for lunch or dinner and crab salad served over salad greens or stuffed into a fresh, ripe tomato is one of my favorites. Prep time is no more than 10 minutes, low in calories, high in protein and a crowd pleaser.
Ingredients:
- 10 ½ ounces lump crab meat
- ¼ cup chopped cilantro
- ¼ cup scallion greens
- 1 ½ Tablespoons light mayonnaise
- 2 teaspoons grated lemon peel (zest)
- ¾ teaspoon lemon juice
- Sea salt
- Pepper
Directions:
- Finely chop the fresh cilantro
- Slice the scallion greens extra thin
- Combine all of the ingredients in a medium bowl, mixing thoroughly.
- Add salt and pepper to taste
- Cover and chill for at least ½ hour
- Serve over salad greens, or stuff in a tomato and enjoy!
