Crab Salad

Now that summer is here I like to have some quick, no cook ideas for lunch or dinner and crab salad served over salad greens or stuffed into a fresh, ripe tomato is one of my favorites.  Prep time is no more than 10 minutes, low in calories, high in protein and a crowd pleaser.


Ingredients:

Directions: 

  1. Finely chop the fresh cilantro
  2. Slice the scallion greens extra thin
  3. Combine all of the ingredients in a medium bowl, mixing thoroughly. 
  4. Add salt and pepper to taste
  5. Cover and chill for at least ½ hour
  6. Serve over salad greens, or stuff in a tomato and enjoy!
