Cream Cheese and Lox Omelet
Sunday morning breakfasts/brunches growing up in Brooklyn consisted of fresh hot bagels, cream cheese, lox, sliced onions and tomatoes, or for variety “baked” salmon, whitefish or pickled herring. When I saw that Costco had some amazing looking smoked salmon, and it was wild caught, I had to buy it. The birth of my cream cheese and “lox” omelet for 2 was the result. Try it, it’s yummy, protein packed and sure to please if this is your style.
Ingredients:
- 4 ounces of smoked salmon
- 1 egg
- 5 egg whites
- 4 Tablespoons fat free cream cheese
Directions:
- Spray a 10 inch skillet with non-stick spray (my current fave is coconut oil spray- nothing sticks to it)
- With a fork pull the salmon apart into small bits and then warm in a microwave oven for 10-15 seconds on half power
- Warm the cream cheese in the microwave on half power for 5 seconds (so it will distribute easily over the eggs)
- Whisk the eggs and the egg whites together and add to the preheated (medium heat) skillet
- Cook the eggs until they are almost fully set
- Add the salmon, and then the cream cheese over ½ the eggs and carefully fold over
- Cook to thoroughly warm and complete the cooking of the eggs and start to melt the cream cheese (I toss a drop of water in the pan and then cover it and it all steams)
- Slide onto a plate, cut in half and serve with sliced tomatoes if you like
Alternative directions:
- Cook the eggs until almost set and then add the salmon and the cream cheese over the entire pan, cover and finish cooking
