Crock Pot Pork Salsa Verde
As the days get both shorter and colder getting the crock pot going in the morning and coming home to dinner ready to serve is my idea of how to roll. I don’t hear any arguments from you guys either…
Ingredients:
- 1 large onion cut into small wedges
- 1 ½ pounds boneless pork loin cut up into one inch pieces
- 1 1/3 cups chopped tomatoes or 1 can of chopped tomatoes
- 1 -16 ounce jar of salsa verde (or tomatillo salsa would work too)
- 2 minced garlic cloves
- ½ cup chicken broth
- 1 teaspoon ground cumin
- ¼ teaspoon black pepper
- Fresh cilantro for garnish
Directions:
- Place onion and pork in crock pot. Top with other ingredients.
- Cover and cook on low for 6 hours or on high for 3 hours.
- Serve in a bowl and garnish with cilantro and a Tablespoon of Greek yogurt
