Curried chicken salad

 

I threw this together on Saturday and what a delight it turned out to be:

I took 2 large cans of canned chicken (from Costco), drained them, washed them to get rid of most of the sodium, then added some chopped celery, fat free mayonnaise, 0% Greek yogurt, Dijon mustard and curry powder. Mixed it all together.

As I was adding the mayo, yogurt and mustard I measured it and jotted it down. I added up ALL of the calories and protein and separated it into 5 small containers that were 160 caloriesand 34 grams of protein each. I take one container, put it on a rice cake (60 calories/2 grams protein) and have a 220 calorie 36 gram protein crunchy, filling, satisfying lunch......

Or, I would add the scoop of chicken salad on top of some fresh baby spinach with a cucumber and some sliced tomato and maybe even a T of slivered almonds for a dinner serving.

Yesterday for lunch I split one of the containers , still put it on a rice cake and added 1/4 of a sliced avocado to it on top. Kept the calories the same, reduced the protein a bit, but it was filling, delicious, and added some of those great omega 3 fats that we need...Hubby loved his, but he'd already had some peanuts so it was enough for his unbanded appetite.
