Dijon Salmon
I love when the prep time for something is less than the cooking time. Here’s one that takes less than 5 minutes to prepare and then requires baking at 15-20 minutes, depending on the thickness of the salmon filet. Serve with some fresh steamed summer squash topped with lemon pepper and you have a delicious, nutritious and protein first meal.
Ingredients:
- Three ounce sockeye salmon filet ( you can use any salmon- I used the calories and protein for sockeye because it’s my favorite)
- Three to four teaspoons of Dijon mustard
- Trader Joe’s (or anyone else’s) lemon pepper seasoning
Directions:
- Preheat oven to 350 degrees
- Spray a baking pan with olive oil spray ( I use my Misto) or coconut oil spray
- Pat the salmon filet dry and place on baking pan
- Spread the Dijon mustard liberally over the salmon filet
- Give a few twists of lemon pepper seasoning
- Place in oven and bake for 20 minutes or until fish is just done. Do not overcook
