Dijon Salmon

I love when the prep time for something is less than the cooking time.  Here’s one that takes less than 5 minutes to prepare and then requires baking at 15-20 minutes, depending on the thickness of the salmon filet.  Serve with some fresh steamed summer squash topped with lemon pepper and you have a delicious, nutritious and protein first meal.


Ingredients:

Directions:

  1. Preheat oven to 350 degrees
  2. Spray a baking pan with olive oil spray ( I use my Misto) or coconut oil spray
  3. Pat the salmon filet dry and place on baking pan
  4. Spread the Dijon mustard liberally over the salmon filet
  5. Give a few twists of lemon pepper seasoning
  6. Place in oven and bake for 20 minutes or until fish is just done.  Do not overcook

Nutrition:  Makes 1 serving with approximately
