Duo Formaggio Marinara Egg Bake
Here's a breakfast, brunch or lunch that's a little taste of Italy with a big protein punch.
Ingredients:
- 24 ounces Egg Substitute
- 8 ounces of Egg Whites (This Was 7 Eggs- I Just Toss The Yolks)
- 2 cups Baby Spinach, Chopped
- 6 ounces Light Mozzarella Cheese, Shredded (I Use Trader Joe's)
- 1 cup Marinara Sauce (I Use Trader Joe's Traditional Marinara Sauce)
- 4 tablespoons Grated or Shredded Parmesan Cheese (I Use Kirkland Parmigiana-Reggiano)
- 1 Can (2.25 ounces) Sliced Black Olives, Drained
- 1/2 teaspoon Oregano
- 1/2 teaspoon Basil
- 1/2 teaspoon Minced Garlic
- 1/2 teaspoon Crushed Red Peppers
Directions:
- Preheat oven to 350 degrees
- Spray a 13 x 9 x 2 baking dish with non stick spray
- Cover the bottom of the dish with the chopped spinach
- In a bowl whisk together the eggs substitute, egg whites, marinara sauce, and seasonings. Pour into baking dish
- Add the olives and the mozzarella cheese, spreading evenly throughout
- Bake at 350 degrees for 20 minutes. Remove from oven and sprinkle the parmesan cheese over the top. Return to oven for another 10 minutes, or until the center is just set
- Remove from oven, cool slightly and cut and enjoy or cool completely and cut and wrap and store in the refrigerator to reheat on 50% power in your microwave for about 1 minute
