Enchilada Chicken In The Crock Pot

Nothing like tossing the ingredients into the crock pot and having dinner ready for you when you (and the family) are ready for dinner.


Ingredients:

Directions:

  1. Spray crock pot with cooking spray (I use Trader Joe’s coconut oil spray or my Misto with olive oil)
  2. Place chicken tenderloins in crock pot
  3. Mix taco seasoning, enchilada sauce and diced green chilies and pour over the chicken
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours
  5. When ready to serve sprinkle cheese over the chicken and allow it to melt
  6. Plate the chicken and sprinkle with green onions

Nutrition:  Makes 4 servings, each with approximately

Variations:  Serve with a dollop of 0% Greek yogurt and/or guacamole (if you do be sure to add the calories/protein to the totals)
