Fiesta Pulled Pork

The Harvest Creek cans of pulled pork intrigued me at Costco so I purchased them.  Now it was time to create something delicious with them and this recipe hit my mark for vegetables, protein, fiber and absolutely delicious taste.  I served it over a bit of cauliflower “rice” for myself and for the family I put it into crisped quinoa and chia seed tortillas with a bit of cauliflower rice as well.  Everyone was totally satisfied at the end of the meal, and we had lots of leftovers for another dinner, some lunches and a frittata.

  1. In a pot that has been sprayed with olive oil spray add the onion, garlic and peppers.  Cook over medium heat until the onion is beginning to get translucent
  2. Add all the other ingredients and mix well to combine.  Bring to a boil, reduce heat to simmer and cook covered for at least an hour on simmer to blend all the flavors
  3. Remove cover, stir well and continue cooking uncovered for about an hour to reduce some the liquid
  4. Serve and enjoy!
