Fiesta Pulled Pork
The Harvest Creek cans of pulled pork intrigued me at Costco so I purchased them. Now it was time to create something delicious with them and this recipe hit my mark for vegetables, protein, fiber and absolutely delicious taste. I served it over a bit of cauliflower “rice” for myself and for the family I put it into crisped quinoa and chia seed tortillas with a bit of cauliflower rice as well. Everyone was totally satisfied at the end of the meal, and we had lots of leftovers for another dinner, some lunches and a frittata.
Ingredients:
- 3 Cans Harvest Creek Pulled Pork In Water (Think Costco), Rinsed Lightly and Drained
- 1 Can Stewed Tomatoes
- 1 Can Rotel Diced Tomatoes With Mild Green Chilies
- 1 Can Black Beans, Drained
- 1 cup Corn Kernels
- 2 Cloves Garlic, Minced
- 1 Small Onion, Diced
- 4 Sweet Mini Peppers, Diced
- 1 tablespoon Chile Powder
- 1 tablespoon Cumin
Directions:
- In a pot that has been sprayed with olive oil spray add the onion, garlic and peppers. Cook over medium heat until the onion is beginning to get translucent
- Add all the other ingredients and mix well to combine. Bring to a boil, reduce heat to simmer and cook covered for at least an hour on simmer to blend all the flavors
- Remove cover, stir well and continue cooking uncovered for about an hour to reduce some the liquid
- Serve and enjoy!
