Fiesta Turkey Cauliflower Rice Bake
Cauliflower “rice” makes almost anything into a great casserole dish. Here’s ground turkey, done with a Mexican flair over cauliflower “rice” with some cheese on top. Family friendly, WLS approved.
Ingredients:
- 8 ounces Lean Ground Turkey (93%)
- 1 1 /3 cups “Riced” Cauliflower (I buy it from Trader Joe’s or you can make it by pulsing cauliflower florets in your blender or food processor until they look like kernels of rice)
- 1 ounce Shredded Lite Mexican 3 Cheese Blend
- 1/4 cup Onion, Chopped
- 3 Mini Sweet Peppers, Chopped
- 1 Clove Garlic, Minced
- 2 teaspoons Taco Seasoning
- 2 tablespoons Black Beans
- 2 tablespoons Frozen Corn
Directions:
- Spray a frying pan with non stick spray then heat to medium
- Add onions, peppers and garlic and sauté for about 2-3 minutes
- Add turkey and taco seasoning and cook until the turkey is done
- Add the tomatoes, corn and black beans and simmer for 5 minutes
- Meanwhile preheat the oven to 350 degrees
- Place the cauliflower “rice” at the bottom of an 8x8 casserole dish, spreading evenly
- Top with the turkey mixture, spreading evenly over the dish
- Finish by sprinkling the shredded cheese evenly over the top and bake at 350 for about 20 minutes or until the cheese has melted and all is bubbly
- Remove from oven and serve
