Fiesta Turkey Frittata For Two
I have individual portions of my Fiesta Turkey recipe in the freezer (check in the recipe list for it), and wanted to make a quick and filling breakfast for me and my husband. I took out one serving, added some salsa, eggs and cheese, and the result was a taste treat that kept me satisfied for over 5 hours. This can be breakfast, lunch or dinner - your choice.
Ingredients:
- 1 serving Fiesta Turkey ( Recipe)
- 1 egg
- 4 egg whites
- 2 oz Trader Joe’s Lite Mozzarella Cheese Shreds
- 2 Tablespoons of hot salsa (or mild, as you like it)
Directions:
- Spray a 10 inch skillet with coconut oil spray and preheat to medium
- Beat egg and egg whites together and add to heated skillet - cover and cook until eggs partially set
- Microwave the Fiesta Turkey and salsa on 50% power for about 1 minute to heat then add to almost set eggs
- Sprinkle on cheese and cover until eggs are set
- Slide onto plate, cut in half and enjoy
