Flourless Chocolate Cake In A Mug - Really?

Yes, you read the recipe correctly.  This will make an individual little cake like treat that is around 100 calories and 8 grams of protein, and is a nice way to have some Valentine’s Day chocolate.  It doesn’t take long to throw together, and is fabulous warm topped with a little Greek yogurt mixed with PB2, or filled with a bit of low fat ricotta cheese mixed with cinnamon and Splenda.  How about warming some blueberries or blackberries until the juice is released, and pouring over the cake?  Your imagination is the only limit to how to dress this up and make it even tastier.

  1. Spray the mug (bottom and sides) with cooking spray
  2. In a small bowl beat the egg
  3. In a separate bowl that is a little bigger than the first, mix the cocoa powder, Splenda, and salt
  4. Add almond milk, vanilla and egg to the dry mixture and mix well
  5. Add baking soda and mix again
  6. Now place in sprayed mug
  7. Firmly tap the mug on the counter to release any large air bubbles
  8. Microwave for about 1 minute 20 seconds.  The time will vary depending on your microwave.  The top of the cake should be solid.
  9. Flip mug onto a plate to remove the cake for cooling
  10. Top with your choice of toppings and enjoy.
