Frittata Italian Style
Sausage, garlic, cheese, more garlic, greens, eggs and top it all off with a bit Bruschetta sauce warmed slightly. Packs a powerful taste punch that the entire family enjoyed.
Ingredients:
- 1 Chicken Sausage, Chopped (I Used a Precooked Chicken Sausage With Smoked Mozzarella, Artichokes and Garlic From Costco)
- 2 Mini Sweet Peppers, Chopped
- 1 cup Power Greens (Or Just Spinach or Just Kale) Chopped
- 1 Clove Garlic, Chopped
- 3 Eggs
- 4 Egg Whites
- 3 ounces Lite Mozzarella Cheese, Shredded (I Used Trader Joe’s)
- 6 tablespoons Bruschetta Sauce (I Used Trader Joe’s)
Directions:
- Spray a skillet with non-stick spray. Over medium heat add the greens, garlic, peppers and chicken sausage and heat until the greens have wilted, about 2 to 3 minutes. Remove from pan and set aside
- Clean pan if necessary and spray with non-stick spray again
- Whisk together eggs and egg whites and add to pan. Cook over medium heat (I cover) until the eggs are almost set, about 3 minutes
- Meanwhile heat the Bruschetta sauce on 50% power in a Microwave safe bowl for 45 seconds
- Add the sausage and greens mixture to the eggs, spreading evenly
- Sprinkle with the cheese, again spreading evenly
- Cover and cook until cheese melts and eggs finish setting
- Remove eggs to a large plate, divide into 3 portions (think- make a peace sign), and top each individual portion with the Bruschetta sauce
- Serve hot and enjoy!
