Grilled Cheese and Bacon on Cauliflower Toast
Some days a nice crispy and gooey grilled cheese sandwich would certainly be wonderful, wouldn't it? Well here it is, only instead of the bread, we've bumped up the protein with cauliflower, eggs, and parmesan cheese for your “toast”. My hubby loved this one… gave it 10 out of 10 and wants it again.
Ingredients:
- 6 Slices Center Cut Bacon
- 3 cups Cauliflower “Rice”
- 2 Eggs
- 2 Egg Whites
- 1/2 cup Sharp Shredded Sharp Cheddar Cheese
- 2 ounces Trader Joe's Shredded Lite Mozzarella Cheese
- 3/4 cup Finely Shredded Parmesan Cheese
- 1/2 teaspoon Oregano
- Salt and Pepper to Taste
Directions:
- Cook the bacon, drain on a paper towel and set aside while you make the rest
- In a medium size bowl lightly beat the eggs and egg whites
- Add the cauliflower rice, shredded parmesan cheese and the oregano. Mix until thoroughly combined and add salt and pepper (optional - I didn't use any)
- Heat a large non stick skillet that you have sprayed with non stick spray to medium
- Scoop 1/6 of the cauliflower mixture into a small patty on one side of the pan. Repeat and form a second patty on the other side
- Press down on both with a spatula (they should be about the size of a hamburger bun) and cook until golden underneath (or to your desired brownness). This will take about 5 minutes
- Flip both patties and cook the other side until golden, about 3 minutes more
- While patties are cooking mix together the cheddar and mozzarella cheeses
- When both sides of the patties are golden place 1/3 of the cheese mixture and 1 slice of bacon cut to fit the “bun” on 1 of the patties
- Place the other cauliflower patty on top and cook until the cheese is melted. Flip over so it melts evenly. This will be about 2 minutes per side
- Remove from pan and serve with an additional slice of bacon
- Repeat process with the rest of the ingredients
