Grilled Chicken With Strawberry Salsa
I love the flavors of summer, and living in California I get to enjoy them all year long. Add some fresh strawberry salsa to your chicken and serve it in flour tortillas to the rest of the family and in a lettuce leaf for you.
Ingredients:
- 1 ¼ pounds boneless, skinless chicken breasts
- 1 teaspoon chili powder
- 3/8 teaspoon sea salt
- Olive oil cooking spray (I use my Misto)
- 8 ounces strawberries
- 2 medium tomatoes
- 1 medium avocado
- 1 small shallot
- ½ cup crumbled Feta cheese
- 2 cups cilantro leaves
- 2 limes
Directions:
- Hull and chop strawberries
- Chop tomatoes
- Chop avocado
- Finely chop shallot
- Prepare outdoor grill - set on medium for direct covered grilling
- Spray chicken with olive oil spray
- Rub chicken with ¼ teaspoon salt and chili powder
- Grill chicken covered until done turning once (about 6-7 minutes per side)
- Transfer cooked chicken to cutting board and let stand for 5 minutes
- Meanwhile, in a medium bowl stir together the strawberries, tomatoes, avocado, shallot and 1/8 teaspoon of salt.
- Squeeze juice of half of one lime into mixture, stirring to combine.
- Thinly slice chicken and serve topped with strawberry salsa, Feta and cilantro
