Grilled Shrimp With Apple-Chipotle Salsa
I love shrimp. They are quick and easy to cook, so low in calories and so high in protein. Dust them in a slightly spicy mixture, toss them on the grill and serve with this quick and easy salsa recipe for a tasty meal.
Ingredients:
Tip! - Prepare the salsa at least one hour ahead.
For the salsa:
- ½ cup apples diced
- ¼ cup red onion diced
- ¼ cup red bell pepper diced
- 2 tablespoons minced fresh cilantro
- 2 tablespoons apple juice
- 2 tablespoons red wine or balsamic vinegar
- Pinch of dried chipotle pepper
- Mix all of the salsa ingredient in a medium bowl and refrigerate for at least an hour.
For the spice mix:
- 6 tablespoons paprika
- 2 tablespoons black pepper
- 2 tablespoons sea salt
- 1 tablespoon chili powder
- 2 teaspoons brown sugar
- Pinch of cayenne pepper (or more if you like some real heat)
And, - finally!
- 12 ounces of raw shrimp peeled, deveined and butter flied
Directions:
- Combine spice mix ingredients in a small bowl.
- Lightly dust shrimp with the spice mix
- Preheat grill to medium high
- Brush grill rack with oil or spray
- Cook shrimp until pink, about 1 minute per side
Serve the shrimp with salsa and enjoy.
