Ham and Mozzarella Omelet
Here is a quick, easy, tasty, protein packed breakfast for one.
Ingredients:
- 1 brown egg
- 1 ounce Trader Joe’s Lite mozzarella cheese
- 1.4 ounces Black Forest Ham
- Coconut oil spray (Think Pam, or Trader Joe’s)
Directions:
- Spray a small (6 inch) frying pan with coconut oil non stick spry
- Warm the pan on low to medium heat
- Weigh and measure the ham and chop it up and set aside
- Weigh the cheese and set aside
- Crack the egg into a bowl and whisk it
- Pour into preheated frying pan and cook until almost set
- Slide the ham and then the cheese onto one half of the egg
- Fold over, cover and cook for another minute or so, just until the cheese is melted.
- Slide onto plate and serve
