Hawaiian - Italian Brunch Frittata

I bought a fresh pineapple and wanted to be sure to use it up before it went bad.  Here is one of the taste treats I made with fresh chopped pineapple chunks.  Sweet and savory mixed together works for me.

Ingredients:

Directions:

  1. Spray a 10 inch skillet with non-stick spray (I use Coconut oil spray)
  2. Place on stovetop on medium heat
  3. Brown the prosciutto on both sides until almost crispy - remove from heat and place between 2 paper towels to blot off the excess grease
  4. Beat together the Egg and egg whites in a medium bowl
  5. Respray the skillet and add the eggs
  6. Cover and cook on low to medium until eggs are 95% set.  Do not overcook
  7. Meanwhile crumble the prosciutto
  8. When eggs are almost set add the pineapple, prosciutto spreading evenly over the eggs
  9. Finally add the cheese, cover and cook again for a minute or so to complete setting the eggs and to melt the cheese
  10. Remove from heat, slice into two pieces and serve immediately
