Hawaiian - Italian Brunch Frittata
I bought a fresh pineapple and wanted to be sure to use it up before it went bad. Here is one of the taste treats I made with fresh chopped pineapple chunks. Sweet and savory mixed together works for me.
Ingredients:
- 1 egg
- 5 egg whites
- 2 ounces Trader Joe’s Light mozzarella cheese
- 3 slices prosciutto
- ¾ cup chopped fresh pineapple
Directions:
- Spray a 10 inch skillet with non-stick spray (I use Coconut oil spray)
- Place on stovetop on medium heat
- Brown the prosciutto on both sides until almost crispy - remove from heat and place between 2 paper towels to blot off the excess grease
- Beat together the Egg and egg whites in a medium bowl
- Respray the skillet and add the eggs
- Cover and cook on low to medium until eggs are 95% set. Do not overcook
- Meanwhile crumble the prosciutto
- When eggs are almost set add the pineapple, prosciutto spreading evenly over the eggs
- Finally add the cheese, cover and cook again for a minute or so to complete setting the eggs and to melt the cheese
- Remove from heat, slice into two pieces and serve immediately
