Heavenly Turkey, Green Beans, and Mushrooms

I saw a recipe for creamy green beans and mushrooms.  It sounded good, but too much work for just a side dish so I added some more protein and put several new twists on it.  This is a one pan meal that rocked my world and my family’s for several meals.

Ingredients:

Directions:

  1. In a large pan, bring about 1 inch of water to a boil and toss in green beans.  When water comes back to a boil, cover, reduce heat to simmer and steam for about 5-6 minutes.  Remove from heat, pour into a colander and pour cold water over the green beans to stop the cooking
  2. Spray the pan with non stick, return to medium heat and add the turkey, about ¼ teaspoon each of sea salt, fresh ground pepper, thyme and oregano and cook until turkey is done.  Remove the turkey to a bowl and keep warm
  3. Return the pan to medium heat, spray again with olive oil spray, add the onions and garlic and sauté until onions begin to soften.  Add mushrooms and continue cooking, stirring frequently, until the mushrooms are done (they give up their water)
  4. Add the turkey and the green beans back to the pan, stirring to mix well and heat until warm.
  5. Once everything is nice and hot, add the Greek yogurt, mixing thoroughly to combine with the “juices” and create a creamy sauce covering everything
  6. Serve hot and enjoy!
