Heirloom Tomato Caprese Salad
As summer continues and the heirloom tomatoes are available at my local Farmer’s Market, and the basil in the pot outside my door is happily growing daily, this dinner idea uses some yummy salami, fresh veggies, and cheese to tantalize even the most particular palette. YUMM!
Ingredients:
- 36 Slices Trader Joe’s Salame Di Parma Mild Salami
- 5 Assorted Heirloom Tomatoes (For Varying Color and Taste)
- 2 cups Mixed Baby Greens
- 6 ounces Fresh Mozzarella Cheese
- Fresh Basil Leaves
- 2 tablespoons Balsamic Vinegar
- 1 tablespoon Extra Virgin Olive Oil
- 1/4 teaspoon Sea Salt
- Freshly Cracked Black Pepper
Directions:
- Wash tomatoes and cut into 1/4 inch thick slices
- Place greens on a large platter
- Cut mozzarella into thin slices
- Place the salami, mozzarella, and fresh basil leaves over the tomato slices
- Drizzle with vinegar and olive oil
- Sprinkle with salt and pepper
