Hot Italian Turkey Sausage, Squash, and Marinara Sauce
It was just before 7 pm and I had to figure out dinner. I opened the freezer and found some Jennie-O Hot Italian Sausage. Opened the refrigerator, saw a small bag of baby summer squash, and mini bell peppers. Found an onion in the bowl on the counter, and a jar of sauce in the cupboard. Threw it all together and it was amazing. Try it, you’ll like it, and it went together in a total of 20-30 minutes.
Ingredients:
- 1 medium onion chopped
- 4 mini sweet bell peppers chopped
- 2 ½ Jennie-O Hot Italian Sausage
- A small bag of baby squash quartered
- 12 ounces of marinara sauce
- 5 Tablespoons grated parmesan cheese
Directions:
- Heat a large skillet to medium high
- Remove the turkey sausage from the casing and brown in the pan with the onion and peppers until onion is translucent and turkey sausage is cooked through stirring frequently
- Add the quartered baby squash and mix into the sausage onion pepper mixture
- Add the marinara sauce and stir in thoroughly
- Cover and cook until squash is done to your liking
- Serve in bowls, topping with grated parmesan
