Hot Sausage Pizza Frittata
I like having breakfasts pre-made so my family and I can grab a slice of frittata, pop it in the microwave on 50% power for 1 minute, and breakfast (or lunch) is right there. I typically make these on Sunday morning, let the pan cool, and then wrap the slices individually and keep them refrigerated for 4-6 days with no problems. If it’s only you, cut the recipe in half and you’ll make 4 servings.
Ingredients:
- 4 ounces Hot (Spicy) Turkey Sausage
- 32 ounces Egg Substitute (Or Egg Whites)
- 8 ounces Lite Shredded Mozzarella Cheese
- 4 tablespoons Shredded Parmesan Cheese
- 4 tablespoons Marinara Sauce, I used Trader Joe’s Traditional Marinara Sauce
- 1/2 Onion, Diced
- 1 Large Clove of Elephant Garlic, Diced
- 2 cups Spinach, Chopped
- 2 Mini Sweet Peppers, Chopped
- 1 teaspoon Oregano or Italian Seasoning
- Dried Red Pepper Flakes (To Taste)
Directions:
- Preheat oven to 350 degrees
- In a skillet that has been sprayed with non-stick cook the ground sausage, onion, garlic, spinach, peppers. When just about done add oregano and pepper flakes stirring just until fragrant.
- Spray a 13x9x2 pan with non-stick spray and spread the sausage and veggie mixture on the bottom evenly.
- Whisk together the egg substitute and marinara sauce and pour over sausage veggie mixture.
- Spread shredded mozzarella cheese evenly over all.
- Bake at 350 degrees for 30 minutes.
- Remove from oven, sprinkle with shredded parmesan cheese and return to oven for 10 minutes, or until center is set. It will spring back to your touch. Don’t overcook.
- Remove from oven, cool slightly and serve or cool completely and cut into 8 portions, wrap and refrigerate.
