Hot Sausage Pizza Frittata

I like having breakfasts pre-made so my family and I can grab a slice of frittata, pop it in the microwave on 50% power for 1 minute, and breakfast (or lunch) is right there.  I typically make these on Sunday morning, let the pan cool, and then wrap the slices individually and keep them refrigerated for 4-6 days with no problems.  If it’s only you, cut the recipe in half and you’ll make 4 servings.

  1. Preheat oven to 350 degrees
  2. In a skillet that has been sprayed with non-stick cook the ground sausage, onion, garlic, spinach, peppers.  When just about done add oregano and pepper flakes stirring just until fragrant.
  3. Spray a 13x9x2 pan with non-stick spray and spread the sausage and veggie mixture on the bottom evenly.
  4. Whisk together the egg substitute and marinara sauce and pour over sausage veggie mixture.
  5. Spread shredded mozzarella cheese evenly over all.
  6. Bake at 350 degrees for 30 minutes.
  7. Remove from oven, sprinkle with shredded parmesan cheese and return to oven for 10 minutes, or until center is set.  It will spring back to your touch.  Don’t overcook.
  8. Remove from oven, cool slightly and serve or cool completely and cut into 8 portions, wrap and refrigerate.
