Italian Breakfast Scramble With Prosciutto
I love frying up prosciutto just like bacon, and what better to serve it with than an Italian style breakfast scramble.
Ingredients:
- 4 Slices Prosciutto Browned and Crisped On Both Sides
- 2 Eggs
- 4 Egg Whites
- 2 ounces Trader Joe's Lite Mozzarella Cheese
- 2 tablespoons Trader Joe's Bruschetta
Directions:
- Spray a frying pan with non stick spray
- Over medium heat brown prosciutto on both sides
- Remove from pan to a paper towel
- Clean pan if necessary and respray
- In a bowl whisk together the eggs and the egg whites
- Add to pan and scramble, adding the mozzarella cheese just as the eggs begin to set
- Remove from heat. Plate and top each portion of eggs with 1 tablespoon Bruschetta
- Serve with prosciutto and enjoy
