Italian Sausage and Peppers Over Cauli Rice

There are so many varieties of fully cooked chicken sausage available now I thought I'd try some hot sausage with peppers, onions and garlic.  All that was missing was the Italian bread, so I put it over some cauliflower rice instead.

  1. In a large skillet that has been sprayed with non stick spray, over medium heat brown the sausage coins.  Remove from heat and set the sausage aside
  2. Add the olive oil to the skillet and heat.  Add the onion, bell peppers, garlic, basil, oregano and crushed red pepper and sauté, stirring frequently until the peppers soften and the onions are golden and soft
  3. Add the wine and continue stirring for about 2-3 minutes
  4. Add the sausage to the skillet and stir and cook for about 10 minutes to fully warm the sausage and continue to cook off the wine
  5. Meanwhile microwave the cauliflower rice at full power, covered with plastic wrap for 3 minutes
  6. Split the “rice” between two bowls and top with the sausage and pepper mix
