It’s Like a Breakfast Pizza
My granddaughter took one bite and named this dish for me. Lots of great flavors and quite filling.
Ingredients:
- 6 slices prosciutto, browned to crisp and chopped
- 1 cup spinach or power greens, chopped
- 2 ounces feta cheese, crumbled
- 4 tablespoons Bruschetta sauce ( I used Trader Joe’s)
- 2 eggs
- 8 egg whites
Directions:
- Spray a 10 inch skillet with non-stick spray and heat to medium
- Whisk together the eggs and egg whites until well blended and almost frothy
- Pour into heated pan and cover for 2-3 minutes
- When eggs are about 1/2 set add greens, prosciutto and feta cheese evenly over all
- Cover and allow eggs to finish cooking
- Add Bruschetta sauce and remove from pan
- Slice into 3 equal portions (think peace symbol) and serve hot
